L ast week I shared my tiramisu, and today i wanted to share another super easy fast no brainer type of recipe. These spinach and feta puff pastry rolls are beautiful to look at and also excellent to at both warm or cold, either alone or accompanied by a tomato sauce or a yogurt based cream.
SPINACH AND FETA ROLLS
1 pack of puff-pastry dough
250g of Spinach (you can get frozen packets too)
150g of Feta
1 Egg + 1 Egg white
Garlic and Paprika
Extra virgin Olive Oil
Cook the spinach, drain them well and chop them up.
Roughly chop up the walnuts too.
In a small bowl, mix the egg with the garlic and spices, then add in the nuts and the spinach, and mix well, then add the feta and mix again.
Take your puff pastry sheet and cut rectangular strips of dough.Use the egg white to brush the edges of the dough, then add the mixture, and close up the roll (as shown in the pictures). Continue until you have no more spinach and feta mixture eft (I used 2 sheets of pastry and got 10 rolls).
Glaze all the rolls with the egg white and put them in the oven at 180° for 10-15 minutes, or until golden.
